The In-laws Are Coming- Cherry Clafoutis (a quick yet delicious dessert)

    The in-laws are coming and you have no idea what to make other than your favorite boxed brownies, which is never impressive. This recipe is simple yet amazing. Cherry Clafoutis is what you may call a firm custard and will come out looking a little rubberish, but just wait until you take a bite!  It is extremely light and perfect for breakfast with coffee. It wasn't that pricey a can of cherries $1.89, slivered almonds about 50 cents and Amaretto or almond extract about 50-75 cents worth.

                                  



Here is the ingredient list-
  • 2 cups of sweet cherries, pitted I used canned (NOT pie filling- they're in their juice)
  • 2 tablespoons of slivered almonds
  • 3 eggs
  • 3/4 cup of sugar
  • 1 tablespoon of brown sugar
  • 1/2 cup of all-purpose flour
  • 1/8 teaspoon of salt
  • 1 cup of milk (2% or whole milk)
  •  2 teaspoons of Amaretto or 3/4 teaspoon of almond extract
  • 1 1/2 teaspoons of vanilla extract
  • Powdered sugar for dusting


Preheat oven to 350 and butter and flour a 10x7 dish. Spread the almonds and cherries in the bottom of your dish.



Beat eggs and then add sugars until well blended

Add flour and salt until smooth
add Amaretto(pictured), vanilla and milk, Mix until smooth


Pour batter over cherries and almonds


Bake for about 30-35 minutes until top is golden brown

Sprinkle with powdered sugar and enjoy!
